Energy balls. That’s funny, right? (My husband is going to have a field day with this one.)

If there’s one thing I need in my life, it’s good food that I can grab and go. After I had Evy, I got into the bad habit of grabbing store bought granola bars. Not only did they NOT fill me up, but they made me feel like crap. Maybe it was all of that processed nonsense that has zero nutritional value and exists only to make sure you continue to crave it. 

Enter: these energy balls. 

We whip up these on Sunday, and we’re good to go all week. Harper loves to pull up her stool and help me make them, and the Mister takes a batch to work. Plus, mama gets to satisfy her sweet tooth. 

(Did I mention they’re also great for breastfeeding mamas and can help increase your milk production??)

No Bake Coconut Chocolate Chip Energy Balls

Ingredients

  • 2 cups oats
  • 1/2 cup peanut butter
  • 1/2 cup unsweetened coconut
  • 1 tbsp chia seeds
  • 1 scoop PB2
  • 1/2 cup honey
  • 1/2 cup mini chocolate chips

Instructions

  1. Pour all ingredients into bowl and mix. 

  2. Roll into balls and place on baking sheet. 

  3. Freeze for 1 hour.

  4. Enjoy + save the rest for later!
